Who Decides What We Eat?

It may seem like a silly question, but the impression given In Defense of Food is that somehow outside groups like the Food Companies, Food Scientists or Nutritionists dictate what we eat. Apart from someone that is institutionalized, like in a prison, the rest of us of course decide what to buy and what to spend our money on. Accepting personal responsibility is avoided if we just blame someone else for our choices and problems. Unfortunately taking personal responsibility for our decisions (such as what we eat, how much we eat and how much activity we wish to do) is not a theme in this book. The Go Big Read program is a great opportunity to engage in this dialogue. Food scientists can help inform us (as we are all consumers of food) of what is the current "science" on a topic and they challenge us to question our assumptions about food.

Compared to even 50 years ago we now have an incredible variety of foods available and we also have made huge progress in improving food safety over this time. Of course having more food choices available can be confusing. An important point I wish to make here is that food companies do not control what consumers will buy. Companies, not just food companies but any company that wants to stay in business, spend a lot of money and time trying to understand consumers. They undertake market and consumer research in an effort to try to understand what is important to consumers and what trends are altering consumers purchasing decisions. Consumers are exposed to a wide range of influences including new fads and diets (in the past 10 years or so we have seen the emergence of various popular diets such as Atkins, South Beach Diet, Nutrisystem, Low Carb, etc). Nowadays, consumers are exposed to a lot more new ideas but also more fads and bad science through Cable TV, Internet, blogs, and the rise of networking sites like Facebook. Food companies respond to these (or emerging) consumer trends by trying to re-position (market) their existing products or introduce new products. There is a high risk (and cost) associated with developing or launching new products, and marketing is heavily involved because if the consumer does not want this product then the product will fail. The difficulties that food companies face in developing new products can be demonstrated by the failure within 6 months of a high percentage of new products that are launched. It is in this context that we should view the changes that we have seen in the types of foods in stores and how they are marketed over the past 20 years.

Another aspect to the impact that consumers have on the food industry can be seen by the reluctance of food companies to use new technologies unless there is consumer acceptance of that technology. Some technologies they know could greatly benefit the safety of foods for consumers. An example is irradiated foods which have been accepted as safe by groups such as World Health Organization (WHO), the Centers for Disease Control and Prevention (CDC) as well as by the U.S. Department of Agriculture (USDA) and the Food and Drug Administration (FDA). In particular, it is a promising technology for the treatment of raw meat which is routinely the cause of food poisoning outbreaks. Because NASA is fearful of astronauts getting food poisioning while they are in space their foods are irradiated. As we discuss what's in our food and how it is produced I hope we will realize that with any technology there is always a risk and a possible benefit. We just have to decide if any suggested risk is real and how significant, and then decide if the benefits outweigh the risks. We also need to understand that rejection of some new technology or science also means we "lose" the benefits that might have resulted from the utilization of that approach.

Food manufacturing companies certainly do not control what we buy, however in todays world with the modern lifestyles most of us live, there's a tendency to lean towards the convenience foods over the 'old fashioned' wholesome food stuffs. Lets not forget that we can all help offset the problem by growing our own produce, even on a small scale it'll make a fundamental difference. Why not have a few vegetable plants in the yard? Why not self sustain over the microwave TV dinner? Sure its not as 'convenient' but its certainly a healthier approach.

Its evident that food manufacturers dictate the food market in any country. Say in U.S the obesity rate is rising and every one is blaming the food market because of the availability of less nutritious foods. A healthy diet is required with a control to temptation.

By doing simple things such as reading food labels before deciding what to eat to lose weight can make a huge difference in the amount of calories a person eats in a day. Many foods have hidden calories in them that you may not even realize your are consuming them if you do not read the labels.

Food manufacturing companies do have a great impact on our choice of food. In fact Public minds are dictated via commercials and marketing. Those companies invest a lot to make up the brain of common people to believe what ever they are promoting.
Its great responsibility of official authorities to have a check on whatever food companies are promoting and make sure the products are good enough for people.

If you want to get fitter or you are exercising for weight loss you must eat the right things. You cannot burn the fat or exercise to your full potential if you haven't eaten balanced meals incorporating carbohydrate, protein, fruit and vegetables and small amounts of good fats.

I believe it is the individual responsibility to know what you are eating and what it will do for you or to you. I know that with fibromyalgia there is a big problem with starches pretty much the atkins diet is what you should be eating. If it is white don't eat it and you will feel better.

While food companies do not control what we buy, they do influence our buying decisions to a large extent esp. re. processed foods.

A healthy diet consists of fresh, unprocessed foods, healthy fats and plenty of water. Simple. Your food choices only become complicated if you let fad diets, clever marketing and food companies affect your decisions.

I would say the problem isn't black and white, despite how we argue that we can do little things here and there to change it.

While it is true that by boycotting processed foods, and demanding better, we can help shape what foods are available to us, we actually need people to stand up and fight for it.

And this is where the problem comes in:

the mainstream media controls the majority of the population. If you point it out to someone they will recoil and sneer as they assure you that they control their own destiny, then they turn around, drink some coke, eat some hersheys, and sit down to watch x-factor.

A small minority of health seekers do find out the truth about food, but it's always going to stay a minority because the rest of us are faaar too busy playing x-box, paying a mortgage and working to care about what's good for us. They only find out they've messed up when they become ill, long before they should, and at that point a doctor will tell them, "all you have to do is take this pill" and they think it'll solve everything.

Since the media tells them that taking pills will cure all your ills, they accept it as fact, and challenge anyone who tries to help them otherwise.

As long as there's a way to profit from something, men will do anything in their power to exploit it, even if it includes lying to innocent people to turn a profit.

Yes, we need to face the fact that's it's partly our own fault, it's partly the government's fault, and it's partly the media's fault.

The fact is, in any extreme in life, any obsession, such as finding optimum health, only a small number of folk will have the tenacity to follow through and seek the right answers, and only a small number will find them. If the benefits outweight the pain of not having, people will strive to have something better. And because good health doesn't come right away, most give up at the first hurdle.
But that just makes it so much sweeter for those of us who find what they look for ;)

Parents Decide what we eat. Many kids learn there eating habits from there parents. and no matter how much we teach them they will always see there parents as the primary correct way of eating. I think that and adding in finances to the equation can lead to many of peoples eating habits.

We're the one who decides what we eat. But you're right, there is a huge variety of food available and restaurants and every company especially in the food industry are trying to understand what their consumers want and don't and since we all have different preferences, it's hard. Sometimes we tend to decide on choosing food that's already "ready-to-eat" instead of having it prepared from raw food to actually cooking it. People's eating habits are constantly changing and always depends on their lifestyle.

I agree that no one controls what we eat. We are free to buy and eat anything we want. The problem is that food companies make all the processed and unhealthy food cheap and easy to buy, while healthy food is more expensive and not as convenient.

Our eating habits are definitely an acquired taste (no pun intended) considering all the external influences, ranging from the cultural norms of our family, to the daily influx we get from the in-your-face advertising that pushes convenience over the importance of health values.

Nowadays everyone knows that there certainly is no mystery or secret system to losing weight. Everybody knows that appropriate fat diet combined with exercises is the only real approach to burn fat but you can do a couple of things to speed up the process a bit.

Tip: Work out for at least 30 minutes first thing in the morning and eat a decent breakfast about 15 to 20 minutes after your exercises and you will strip that fat.

It would be nice if organic foods were advertised and pushed more. If their was a organic fast food restuarant or if fast food resturaunts put organic foods on their menu's, that would be awesome, I know that it would be very challenging to do so, as organic foods doesn't have long shelf life's.

In 24 years of existence my mother always decides what will we going to eat to protect and provide us in contaminated and poisonous foods. Sometimes we depends on the products of food companies and we all know most of people depends to it to consume their time. Anyway, thanks for sharing this topic. This really is a great topic and you are totally spot on by saying Food Companies DO NOT decide what we eat. Our society is in the blame game and blaming others has really gone over the top!

Look at the lawsuits formed by parents against McDonalds - claiming their children are obese because of Happy Meals! I mean come on who buys the food and more importantly, "Who wears the pants in your family?" (Looks to me that the children.....run the show!)

You know there is so much emotion involved on the purchasing of food as well. Eventually down the road the marketing does pay off as sooner or later the advertising $$ spent by the food companies does trigger sales.

You really touch on a great point that "SAFETY" does not always sell, I mean look around us and especially the vehicles we drive. Sure I could put my children in a bullet proof tank, but does my wife really want to drive the same vehicle our boys are driving in Iraq?

Watching a recent documentary on the salt and additives that go into pre packaged food was really worrying. Apparantly theres more additives in the packages vegetables than there was in a mcdonalds beefburger. We need to make a change now before its too late

Well said, I totally agree. Consumers are the ultimate decision makers. As you said, the companies cannot survive without sales and consumers determine sales figures. We can put pressure on these companies to offer healthier choices simply by not purchasing unhealthy products.

I agree that we are the one's who will choose what to eat. It is our money and we have the right what to spend it for and we are the ones who will eat the food and feed our appetite. We all know that we don't want to eat if we don't like the food. So no one could ever dictate us on what to eat. Even our parents will cook the food that we want or we may like.

I love the choice, and agree that we have a choice. But I also think that what we eat is also greatly effected by effective marketing. We eat what we see, we are bombarded by fast foods and fatty foods all day. I think that is as much a problem, as we are to ourselves.

Who decides what we eat? The food manufacturers. They decide what gets planted. If its not planted, its not available -- and if its not available, we can't choose to eat it. The diversity in what food is available is quickly being lost because the food manufacturers want growers to grow only those foods that ship well or freeze well or conform to some other manufacturing standard. This reduces bio-diversity as wll as shelf diversity. It could also reduce taste and nutritional quality. Heirloom seeds are being lost because they are not seen as commercially viable. This also reduces what's available to be chosen. GMOs are basically frakenfoods -- we don't really know what their long-term effects will be and they are mating with traditional crops.

We all love to eat, and many of us equate healthy eating with boring, tasteless meals. Thankfully it doesn't have to be that way. It's very possible to eat foods you truly love while also improving your health and losing weight. Experiment with healthy food options and find some healthy foods that you really enjoy eating.

In order to stay healthy, I think it’s best to stick to “real” food like fruits and vegetables, not processed fake food that is just a diet fad.

Yes, that is right. These companies dictate what we eat and we are not even aware of it. Just look around you. There are more fast-food chains than supermarkets or restaurants offering organic and healthy foods! Thanks for sharing this! And I also agree with disney movies!

Although I agree that the main stream media has a lot of things to do to promote the junk food we eat, we should never forget that the main stream media gets a huge amount of money to promote it. However it is up to us to decide what to eat. I see McDonald everyday around my place, but i do not go and it this junk food. It is all about disciplining yourself. if you say no to junk food, you will be heading to a healthier life. I am a vegetarian and I am very happy with my lifestyle.

I just chose to select what to eat try to avoid refined sugar and junk food, try to eat more vegetables and fruit instead to go hamburgers soda and fries, and i have to say i feel much better now...

You need food to survive, but your parents have a big role on what you eat growing up. i know for me I do not like any vegetables whatsoever because I was forced to eat them growing up. But your tastebuds are always changing, and it is up to your personally to decide what you want to put in your body. My biggest issue with the fresh foods that we have available to us is the amount of pesticide being used on fresh fruits. How damaging all this can be is something I would like to find out from the experts. This has led me to cunsume less food, hence has helped me with my weight loss.

Well said, I totally agree. Consumers are the ultimate decision makers. As you said, the companies cannot survive without sales and consumers determine sales figures. We can put pressure on these companies to offer healthier choices simply by not purchasing unhealthy products.

EWG is playing a huge role in educating the masses about food and health. Pricing plays a role, too, and it's really a challenge to get good/organic food when it costs so much higher than the rest. But to most people - their budget decides what they eat even though they wish for the best for their family.

It's hilarious how people so quickly assimilate to the ideals of TV characters. In the US people are so focused on body image yet make it a religious practice to each at places like McDonalds. Its like people believe they can easily get liposuction and lose all the weight. Does anyone else notice the disconnect here?

Who decides what we eat? The food manufacturers. They decide what gets planted. If its not planted, its not available -- and if its not available, we can't choose to eat it. The diversity in what food is available is quickly being lost because the food manufacturers want growers to grow only those foods that ship well or freeze well or conform to some other manufacturing standard. This reduces bio-diversity as wll as shelf diversity. It could also reduce taste and nutritional quality. Heirloom seeds are being lost because they are not seen as commercially viable. This also reduces what's available to be chosen. GMOs are basically frakenfoods -- we don't really know what their long-term effects will be and they are mating with traditional crops....

I am agree that foods from the market place is not all time are safe. So, we must check the label before buying on it. If you are possible to do some kind of vegetables planting, it is highly recommended to make it sure that the foods are safe. If not, then, you must select the food that is lesser cholesterol (can be seen in the label). We cannot tell or force the market to eliminate the bad ingredients because they are just the one who making a marketing. Even the supplier will not give importance on it.

The best thing that we must do to get a good healthy living, just stick a natural ways on eating the right food, regular exercise is a must! There is a secret on it!

I think it is very sad that unfortunately for many families they are captured by the manufacturers! There are so many simple recipes to cook from scratch, but fresh is not advertised as good. When did you last see an alluring, colourful and fun advert for broccoli!

Food choice, like any complex human behaviour, is influenced by many interrelated factors. The key driver for eating is of course hunger and satiety, but what we choose to eat is not determined solely by physiological or nutritional needs.
